300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Premix (yields 850ml, enough for 10)

200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Method

For the Citrus Syrup: Place the listed components into a saucepan, bring to a simmer, stirring so the sugar melts. After that, take off the stove allowing it to cool down fully. Transfer into a sterilised bottle, cap it keeping it in the refrigerator, it can be stored for around one month.

Preparing the Cocktail Base: Pour every spirits and syrup in a large bottle, leave to sit for one hour, then strain preferably using a fine cloth, to ensure it's fully clarified.

When ready to serve: Pour 85ml from the cocktail base to a stirring glass packed with ice, and agitate gently for about 60 seconds to chill. Pour into a chilled martini glass or equivalent, top with some cranberries adding the final touch by giving it a brief mist of the essential oil over the drink.
